Spinach

Spinach is one of my favorite things to grow, since it has such a short and fast growth. 


How to Sow and Plant
I started it April first week, indoor in a seedling tray and am very happy with the germination rate of this spinach. 

Week 2

After 2 weeks the seeds sprouted. Germination rates for the seeds are in the 90% range.
Week 3

After 3 weeks i transplanted them outdoor. While they did work out as transplants, they are growing very well in part sun and increasingly warmer conditions. Always as a spring crop and with better than satisfactory results.

Week 4

Provide full sun, cool nights and plentiful water supply. Spinach prefers well-drained soil. It is growing quickly without any issues.

I have been picking them while smaller as I am a fan of having baby spinach ,the flavor beats store-bought spinach in a bag. 
Review 
Start Indoors : In Seedling Tray if outdoor temperature is < 40F
Days to Germination : 2 Weeks 
Transplant Outdoors : By 3 Weeks when outdoor temperature is > 40F
Grow well in early Spring. Great germination rate. Less Care. I will definitely grow this variety in the future.

Spinach Pinwheel Recipe

Serves - 4
Prep time: 10 mins
Cook time: 15 mins

Ingredients:

1 Sheet of Puff Pastry, thawed 
1/4 cup of grated Asiago cheese
1/2 cup of grated Parmesan cheese
½ cup of Frozen Chopped Spinach, defrosted (water is squeezed, well drained)
1/4 cup All Purpose Flour 
1/2 tsp of Garlic Powder 
2 tbsp Onion, chopped 
Egg Wash, one egg beaten with 1 Tbsp of water


Process:
1) Preheat the oven to 400 degrees, line a large baking sheet with parchment paper and set aside. 

2) On a lightly floured surface, roll out the puff pastry to about an 11 inch square and brush the pastry sheet with the egg mixture.

3) In a large bowl mix  together Asiago cheese, Parmesan cheese, onion and garlic powder.

4) Spread the Cheese mixture evenly over the top of the puff pastry sheet, and scatter the Spinach evenly over the top. 

5) Starting on one side, roll the pastry like a jelly roll, stopping at the other end and lightly press the two ends together with your wet finger. 

6) Using a knife, cut the slices about ½ inch thick.

7) Place them flat side down on your baking sheet, a couple inches apart. 

8) Brush the tops with the egg wash and bake them for about 15 minutes or until golden browned. Allow them to cool a bit before serving. 


Spinach/Palak Chapati Recipe


Serves - 4
Prep time: 20 mins
Cook time: 20 mins

Ingredients:

2 Cup Whole wheat Flour 
1 tsp Salt
1 Plate Fresh Chopped Spinach 
1 tbsp Garlic chopped
1/2 tsp of Cumin Powder 
1 tsp Chilli Powder
2 green Chillies chopped
1/2 tsp Turmeric Powder
pinch of Asafoetida
1/2 cup of water
3 tbsp of Oil/Ghee 
Salt as needed

Process: 
 To make dough,
1) In a pan add 2 tbsp of oil/ghee. Add cumin seeds when oil is warm. Add chopped Garlic and Green Chili. Reduce the flame and add Turmeric, Chili powder, Asafoetida and Salt .

2) Add the freshly chopped Spinach leaves to it and mix well for few minutes. Cool it.

 3) Add in the Flour & Salt to above mixture. The moisture from the greens should be enough. Mix until everything it's combined and allow it to knead for 4 to 5 minutes or until the dough becomes nice and smooth. Add water if needed.

4) Divide the dough into golf ball size ball. Dust the dough balls in lot of flour.
Roll it into thin sheets / rotis.

5)  Heat a griddle on medium flame. Flap the chapati between your hands to remove any excess flour, place it on the griddle. Wait for some small bubbles to form. When some small bubbles form then flip.

6) It should start to puff up. Press down on the edges of the chapati with your spatula and cook till both the sides are evenly brown. Serve hot.
