How to Plant
I got mint from ShopRite early spring and planted it in a One Gallon Container. You can grow mint indoor during winter season with LED lights ON at night and watering them occasionally.
Harvesting
Harvest mint leaves at any size by pinching off stems. Frequent harvesting is the key to keeping mint plants at their best. Young leaves have more flavor than old ones, and mint can be harvested as soon as it comes up in spring.

Ingredients:
1/2 kg Chicken in small pieces
2 Onions chopped
1 cube of Ginger
15 cloves of Garlic
1 bunch Mint leaves
1 bunch Cilantro leaves
1/4 cup Coconut grated
10 Cashew nuts
4 Green chilies, slit
11/2 tbsp Coriander powder
½ tsp Turmeric powder
1 tbsp Chilli powder
1 tsp Garam Masala
1 cup Tomato chopped
Salt as required
1/2 kg Chicken in small pieces

1 bunch Mint leaves
1 bunch Cilantro leaves
1/4 cup Coconut grated
10 Cashew nuts
4 Green chilies, slit
11/2 tbsp Coriander powder
½ tsp Turmeric powder
1 tbsp Chilli powder
1 tsp Garam Masala
1 cup Tomato chopped
Salt as required
Process:
1) In a pressure cooker add coconut oil.
2) When the oil is hot add chopped Onions and salt. Stir till onion is translucent.
3) Add paste of ginger and garlic to it. Mix for a couple of minutes till the raw smell goes.
4) Add turmeric powder, chili powder, coriander powder, garam masala and mix for few minutes.
5) Add smooth paste of cashew & coconut. Stir well till it dries.
6) Add mint cilantro paste to the above mixture and stir well.
7) Add chopped tomato, green chillies. Stir very well and simmer the mixture for few minutes.
8) Add chicken pieces and coat it with the mixture.
9) Cook well with less amount of water.
10) When the chicken is cooked and gravy is thick, add salt if needed.
11) Garnish with cilantro and Serve Hot with Chapati/ Bread.
